A specifier-grade guide to picking the right stainless grade, the right ASTM/EN standard, and the right bundle of flanges and fittings — so that hygienic, chemical and high-purity lines ship on one MTR, in one delivery, and stay clean from melt to commissioning.
In a refinery or a power station, a wrong grade usually shows up as a corrosion cell after a year or two of service. In a hygienic line, a wrong grade shows up as a failed CIP, a positive swab, a recalled batch, or a regulator audit. The reason is simple: stainless steel pipe in food, beverage, dairy, pharmaceutical and fine-chemical service is judged on surface finish, weld integrity, crevice behaviour and traceability, not just on pressure rating. A 304 tube that is perfectly fine in a structural handrail can fail a 3-A or EHEDG hygienic audit the first time it sees a clean-in-place solution.
This walkthrough is built around the three decisions a hygienic or chemical buyer actually has to make: which grade family, which product standard, and which joint components (flanges, fittings, gaskets and bolting) need to be on the same mill certificate so the line is acceptable to the inspector at the receiving dock.
Stainless is forgiving, but it is not free. Before a quotation is requested, the specifier should fix five numbers on the datasheet:
Fluid type: WFI water, purified water, process chemical, food product, dairy, brewery wort, or aggressive CIP chemical
Operating temperature band, including CIP/SIP excursions up to 95 °C or higher
Operating and design pressure, plus any pulsation or water-hammer allowance
Surface finish requirement: mill finish, pickled, mechanically polished (180 / 240 / 320 / 400 grit), or electro-polished to Ra ≤ 0.4 μm
Regulatory regime: 3-A, EHEDG, ASME BPE, FDA, EU 1935/2004, or GMP/EMA for pharmaceutical water systems
The surface-finish number and the regulatory regime decide more about the purchase than the chemistry. A 316L tube in 180-grit mechanical polish is fine for a brewery utility line; a 316L tube in electro-polished Ra ≤ 0.4 μm is a different product, made to a different standard, and priced accordingly.
Hygienic and chemical lines are dominated by the austenitic 300 series, with a small but important role for duplex and super-austenitic grades when chlorides or temperature push beyond the 316L envelope. EZ Steel Industrial draws its stainless steel pipe line from 304/304L, 316/316L, 321/321H and the higher-nickel grades that chemical service occasionally demands, all melted and finished to ASTM, EN, JIS and GOST.

A useful internal rule: if the line sees chlorides above about 200 ppm or runs hot above 60 °C, stay in 316L or step up to duplex. If it never sees chlorides and stays under 60 °C, 304L is the economical default. The cost premium for stepping up is small compared to the cost of replacing a sanitary line inside a process skid.
Hygienic and chemical line pipe is sold under several standard families, and the same nominal grade carries a different testing regime, marking rule and traceability requirement in each. Picking the standard after picking the material is the most common reason a hygienic PO gets re-tendered at the receiving dock.
ASTM A312 / A312M — seamless, welded and heavily cold-worked austenitic pipe for high-temperature and corrosive service. The default in international refinery, chemical and offshore tenders.
ASTM A249 / A249M — welded austenitic tube for boilers, superheaters and condensers. ASME B36.19M sizes, solution-annealed condition.
ASTM A269 / A269M — seamless and welded austenitic tube for general low and mid-temperature service, common in hygienic and instrumentation lines.
EN 10216-5 — pressure-grade seamless stainless tube for European pressure projects, 1.4301 to 1.4571. The standard cited in most EU-spec pharma tenders.
EN 10312 — stainless tube for water transport, the EU equivalent of A312 for utility water service.
JIS G3463 (STB / STBA grades) — seamless and welded stainless tube for boilers and heat exchangers in Asian-built facilities.
GOST 9940 / 9941 — seamless austenitic stainless tube for CIS-region chemical and high-temperature service.
ASME BPE — the standard that most 3-A / pharmaceutical buyers actually mean when they say "hygienic tube". Surface finish, dimensional and documentation requirements are tighter than A269.
A good quotation should name the standard on every line. If the buyer is being asked to accept "stainless pipe" with no standard named, the result is a tube that looks like stainless but does not pass an audit.
A hygienic or chemical line is never just pipe. It is pipe plus elbows plus tees plus reducers plus ferrules, all welded, all passivated, all traceable back to the same heat family. Treating flanges and fittings as a separate purchase is the most common way to lose the MTR chain and then fail the audit. For austenitic hygienic service, the pipe fittings in the line are typically long-radius ASME B16.9 elbows, equal and reducing tees, and concentric or eccentric reducers, all butt-weld prepped and dimensioned to match the pipe end exactly. For instrument and sample lines, ferrule fittings in 316L are standard. For utility branches in food and dairy, SMS, DIN and Tri-Clamp ferrules carry the connection.
Flanges have to follow the same grade and standard family. For stainless hygienic lines, EZ Steel Industrial ships ASME B16.5 weld-neck and slip-on flanges in matching 304/304L or 316/316L, with the gasket, stud bolt and nut set rated for the same pressure class. The pipe flanges in a 316L process line should not be carbon steel with a stainless weld overlay, and they should not be 304 when the line is 316L. Both substitutions break the MTR chain and create a galvanic or crevice risk at the joint.
Field tip: ask the mill to list on the MTR the heat number, the ASTM/EN grade reference, the product form (seamless / welded / cold-worked), the solution-anneal condition, the surface finish (Ra value for hygienic lines), and the hydrotest pressure. If any of those six items is missing, the quotation is incomplete and the inspector will reject the delivery.
For a refinery line, the surface can be as-shipped mill finish. For a hygienic or chemical line, the surface is the product. Three finishing steps should be on the datasheet before release:
Pickling and passivation: removes oxide scale and weld heat tint, restores the chromium-rich passive layer. The default finish on every stainless steel pipe leaving EZ Steel Industrial's mill for hygienic service.
Mechanical polishing: 180 / 240 / 320 / 400 grit, used where the duty is food utility or general chemical and a smooth but not mirror finish is acceptable.
Electro-polishing: brings the surface down to Ra ≤ 0.4 μm or better, removes the micro-crevices that mechanical polish leaves behind, and is the standard finish for WFI, PW, and high-purity process lines in pharma and semiconductor duty.
Buyers should specify the finish on the PO by Ra value, not by marketing language. "Polished" can mean 180 grit to one supplier and Ra 0.25 μm to another. The receiving inspector needs a number.

Fittings and flanges named with the same grade and standard, on the same MTR, with the same surface finish.
Gasket, stud bolt and nut set sized for the duty, with insulation kits if the line ties into a dissimilar metal.
